Putting things on toast

Is there a greater joy than a cup of tea and toast? The perfect stopgap when you don’t know what to eat or what to cook. An easy breakfast. A comforting afternoon tea. Just the very best. And because it’s virtually instant, toast is especially appealing to impatient ADHD brains.

So, today’s post is dedicated to toast, and some of my favourite toppings from over the years. Unless otherwise mentioned, assume there’s always butter involved.

 

Banana, cottage cheese and cinnamon. Trust me, it works.

Cheapo pizza

Tomato sauce and cheddar cheese under the grill. The snack of my dreams back in uni days

Avo + Vegemite

This combo came from an old Vegemite ad campaign. I never would’ve tried it otherwise, but it’s actually not bad

Kimchi + Kewpie mayo

During my “making my own kimchi” phase, this became a go-to snack after stumbling home from a night out in my early 30s

Cottage cheese, banana, cinnamon (+ optional honey)

This recipe came from a 12-week program I once followed during my diet culture years. I don’t endorse the program (diets are trash), but this toast stuck around because it’s genuinely delicious. No butter needed

Baked beans + avo (+ optional baby spinach)

Another recipe from that same program. If I’m cracking open a tin of baked beans, this is my reliable breakfast move

Ricotta + honey

Best on multigrain. No butter required. Add strawberries if you’re feeling extra fancy

Cream cheese + jam

Basically everything I love about bagels, without dealing with uneven halves that burn in the toaster. Multigrain bread recommended. No butter

Mouse trap (variations)

Shout-out to my Kiwi pal Kaz. This NZ classic is grated cheese mixed with egg, grilled on toast. I tend to yolo it a bit though—I’ll throw in ham, grated onion, corn, or even crispy chilli oil. That last one was chef’s kiss

One slice peanut butter, one slice Vegemite

This is my ultimate favourite with a cup of tea with just the right amount of milk. I will never say no to this

Avo + Persian feta (+ optional dukkah)

Worth splurging on the fancy marinated Persian feta—you only need a little, so it lasts

Avo + lemon juice

Sensational combo. No notes

Perfectly balanced butter

This one is all about timing: let the toast cool just enough so half the butter melts in, while the other half stays unmelted for that perfect texture contrast. People have strong feelings about butter-to-toast ratios—I’d love to know where you stand
