What I ate this week #2
Not too bad a week on the food front. I needed to do groceries which actually sharpened my focus and made decision making a bit easier.
Most ADHD meal of the week
On the way back from feeding a friend's cat, I went through the KFC drive through for some clandestine hot chips. I ate them in my car because I didn't want to have to share them with my dog when I got home. I made the mistake of giving her a couple of mine once and now she expects them every time. Labradors man.
Biggest fail
Another coffee fail this week. I'd just made a nice bowl of porridge with cinnamon and dry roasted almonds (current breakfast fixation) and sat down on the couch with my coffee. I always rest it on the back of the couch but somehow this time I manage to immediately tip it over, feeding my couch, glasses and the quilt mum made me (sorry mum). This photo really doesn't capture the drama and emotion. It was devastating. .
Biggest win
Salmon and corn rice cooker special
This meal looks like unappealing mush but I love it. It's a solid back-up meal when you haven't done groceries. Add frozen corn and rice into the rice cooker. While that's cooking chop up some shallots or chives if you have them then go sit on the couch. Once the rice is cooked stir in the shallots and a can of salmon plus whatever tasty condiments you have. This time that was crispy chilli oil, kewpie mayo and a little hoisin sauce. Comforting rainy day food.
Worth sharing
Lately I've been trying to incorporate more vegetarian meals into my diet. I really like a salmon and cauliflower bake recipe (link in button below). This week I substituted the salmon for a tin of banana blossoms. It worked really well! I definitely recommend this if you're looking for vegetarian and vegan substitutes.
Not a bad effort, bit heavy on the salmon. 4 aging bananas out of 5 this week
