What I ate this week #1
Welcome to the very first edition of What I Ate This Week — a short round-up of the week's culinary chaos that may or may not come out weekly depending on my brain.
Most ADHD meal of the week
A cold sausage, half a packet of rice crackers, and a cup of tea — eaten in the car while doing school pick up for a friend. Yes these were the same snacks she'd prepared for the kids, no I'm not embarrassed to eat like a 4 year old.
Biggest food fail
Ran out of coffee beans. Hoo boy.
Not technically a cooking fail, but easily the most devastating event of the week. No beans, no brain.
Biggest win
Pulled off a pasta that required basically no effort and made it taste fancy. Cooked penne, then added to the same pot a jar of artichokes, baby spinach, pine nuts, capers, olive oil, and parmesan. Done in minutes, tasted like I had my life together. Not one single thing needed chopping, hurray!
Worth sharing
Look at this glorious hot pot dinner my friend James hosted.
Honestly, hot pot might be the dream ADHD dinner: loads of choice, everything cooks itself, continuous snacking all whilst chatting with mates.
The food was good this week, solid 4 out 5 forgotten apples in the bottom of the fridge.
